What's Cooking? Seattle, WA This week, we're in the Seattle area, famous for snow-capped volcanoes, tranquil, and pristine bodies of water, ferries, the Space Needle, and of course, the ubiquitous Starbucks. Whether you're a transplant, lived here all your life, or just passing through, it would be nearly impossible to miss the abundance of incredible tastes and smells the region has to offer. Novice and foodies alike will enjoy this salmon recipe as Jonae, an Allrecipes member, lifts the lid on her virtual recipe box to show us a favorite recipe she has tweaked for her family.

The Recipe

Pecan Crusted Salmon
This sweet and crunchy sauce makes for a delightful salmon dish. The breadcrumb and pecan topping seems to hold in the salmon's moisture while baking, so the salmon simply melts in your mouth. The salmon is perfectly moist, flakey, and seasoned, and on the sweet side.

"This happens to be one of my most favorite dishes to cook and I just cooked it recently for a dinner party at my house. I have tweaked it just slightly to make it more satisfying to my taste buds. All I did was turn the 5 teaspoons of honey into 3 tablespoons and I left out the parsley and lemon wedges. It is absolutely the best salmon I have ever, EVER had! My mother is a salmon lover and has had all kinds and she said she has never had better," says Jonae.

Jonae loves cooking for her husband and it's become not only a hobby, but an obsession. "We have gone from eating out just about every night to me cooking a new, wonderful recipe from Allrecipes and eating out MAYBE once a month!"

"I started cooking using just my crock pot (it was so easy) and now it's starting to collect dust in my cupboard because I never use it anymore. I have now grown very fond of making marinades for pork, chicken, and steaks. This site has opened me up to so many new and wonderful recipes that I honestly can say I don't have any favorites to cook. I hope to one day call myself a professional and hopefully be experienced in all styles of cuisine. A far-fetched dream, but I believe that you only go as far as you dream....so dream big!!"

Jonae loves cooking for people, whether it be a crowd or just another girlfriend or two. "I used to not care what I put in to my food but now I try and be really conscience of the ingredients I use to make my dishes healthier. As for traditions, I really don't have any...just make good food for good people and have a good time while doing it!!" Thank you, Jonae!      View Cook's Profile >>>

Michael's Notes & Quotes (Over a Cup O' Joe)

Salmon are like men: too soft a life is not good for them."    ~ James de Coquet

Starting out our day at the famous Pike Place Market, we went straight to the experts on salmon. From how to pick the right fish to the finer techniques of removing the pin bones, we were schooled (fish pun intended)! We also had a bit of fun catching the flying fish ourselves. I received high scores all around, except from my mother, disguised as the East German judge, who gave me low points for difficulty regarding the size of my fish. Chalk up a win in Jonae's column but I demand a rematch!

After selecting our salmon, we headed back to Jonae's, where we made an incredible tasting dish. The salmon melted in my mouth and was even fodder for some stupid pet tricks! I wanted to take the rest of the salmon home, but Jonae insisted it was for her "Wolf Pack" so I reluctantly packed everything up and left this delicious dish to Jonae and her friends!

Tips & Tricks

For this recipe, make sure you put your mustard glaze in the refrigerator for more than 30 minutes to ensure that it stays together while baking. Otherwise, it may be too watery to properly coat the salmon.

To save time, prepare the sauce a day in advance. This will also give you a thicker consistency and coating for when it is time to brush it on the salmon.

Substitute walnuts or almonds for the pecans for a different flavor.
